Santa Maria style Tri-Tip

The mainstay of California’s culinary heritage, apparently. Also, very tasty.

Ingredients

  • 3 lbs beef tri-tip (Costco is great for this)
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 1 1/2 tsp garlic powder
  • 2 tsp paprika
  • 1 tsp onion powder
  • 1/2 tsp dried rosemary
  • 1/2 tsp cayenne pepper
  • 3 tbsp olive oil
  • 1/2 tsp Dijon mustard
  • 1/3 cup red wine vinegar

Steps

  1. Mix the marinade in a bowl
  2. Cut the tri-tip into 3 - 4 pieces
  3. Rub the meat in the marinade and place in vacuum sealable bag
  4. Pour any remaining marinade into the bag
  5. Vacuum seal and refrigerate for around 4 hours
  6. Grill on barbeque until center of meat reaches 63°C / 145°F

Serving

pinquito beans, fresh salsa, tossed green salad, and grilled French bread.
