BBQ Ribs

BBQ Ribs (a continuous work in progress)

Ingredients

  • 2 racks baby back pork ribs

For the rub

  • 1/2 cup brown sugar
  • 4 tablespoons chili powder
  • kosher salt
  • black pepper
  • 2 tsp oregano
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder

Steps

sous vide method

  1. Combine the spices etc for the rub
  2. Rub over both sides of the ribs, vacuum seal and leave overnight in the fridge
  3. Sous-vide 6 hours at 75°C
  4. Brush with BBQ sauce
  5. Grill both sides on BBQ until caramelized, brushing once more with sauce on the grill

oven method

  1. Combine the spices etc for the rub
  2. Rub over both sides of the ribs, vacuum seal and leave overnight in the fridge
  3. Preheat oven to 250F
  4. Place ribs in a deep roasting tin, pour ~1 pint of chicken stock under them. Cover pan with foil
  5. Bake for 2.5 hours
  6. Remove from oven, brush with BBQ sauce
  7. Grill both sides on BBQ until caramelized, brushing once more with sauce on the grill
